Salt-cured river fish are piled in boxes waiting to be sold by the kilo. River fish are a staple food in Ukraine and are eaten fresh, dried, cured, or salted. Oha, a traditional Ukrainian soup, is made by boiling potatoes, carrots, and different kinds of fish in water. Garlic and salt are mashed in a separate bowl and later mixed with the broth. The fish, vegetables, and some hot water are followed by a few spoonfuls of the garlic broth. The head is considered a delicacy, and the fishes' eyes and brains are eaten.
